Asian Marinated Pork over Pineapple Fried Rice

Combine and mix the ketchup, soy sauce, Worcestershire sauce, rice wine vinegar and duck sauce in a bowl. Use with one pound of pork as a marinade. For this recipe I like using pork tenderloin because it slices well for the end product. Then, place the meat in a cast iron skillet, leaving the leftover marinade in the bag or container for later. Brown the meat on both sides.

Pour the remainder of the marinade into the skillet.

Finish cooking the meat in the oven for 5-7 minutes or until the center of the meat has reached 145 degrees.

Take the pork out of the skillet and let it rest on a plate or cutting board. While the meat is resting turn a burner on medium heat and heat the leftover marinade until it is the consistency of barbecue sauce.

Ingredients:

  • 1lb pork
  • ¼ cup ketchup
  • ¼ cup soy sauce
  • 1 Tbsp. Worcestershire sauce
  • 1 Tbsp. rice wine vinegar
  • ¼ cup duck sauce

Instructions:

Preheat the oven to 400 degrees. Combine and mix the ketchup, soy sauce, Worcestershire sauce, rice wine vinegar and duck sauce in a bowl. Use with one pound of pork as a marinade. Pineapple Fried Rice

Place the oil in a pan, then add the carrots, cauliflower and green pepper. Sauté on medium heat for 5-7 minutes or until the veggies are tender.

Add the crushed red pepper to create your desired heat. Then, add the two cups of cooked white rice, scallions and pineapple chunks.

Mix this all together.

Add the ginger and teriyaki, mix in.

Heat on medium until the rice is hot all the way through. Slice the Asian Marinated Pork and add it to the top of the rice bowl, along with some of the leftover asian sauce.

Pineapple Fried Rice

Ingredients:

  • 2 tbsp. olive oil
  • 2 cups of day old cooked white rice
  • 1/4 of a cauliflower, chopped
  • 1/4 cup scallions
  • 1 medium sized carrot, diced
  • 1/2 cup pineapple, chunks
  • 1/2 green pepper, diced
  • 2 Tbsp. teriyaki
  • 1/2 tsp. ground ginger
  • crushed red pepper, to taste

Instructions:

Place the oil in a pan, then place in the carrots, cauliflower and green pepper. Sauté on medium heat for 5-7 minutes or until the veggies are tender. Add the crushed red pepper to create your desired heat. Then, add the two cups of white rice, scallions and pineapple chunks. Mix this all together. Add the ginger and teriyaki, mix in. Heat on medium until the rice is hot all the way through.
