Who is Aunt Peg? I have no idea, but her rice is AMAZING. I found this recipe in a pile of old recipe cards and I am so glad that I tried it out! This is a great side dish and you only need to dirty one pan!
Serves 8-10 people
- 2-3 tbsp. butter
- 1 ½ cups of rice
- 2 cans of College Inn chicken broth
- 2 chicken bouillon cubes
- 1-2 cups fresh spinach
- 1 chopped onion
Put all of the ingredients into a skillet. Cover and simmer for 20-30 minutes.
