Crab Melts

This recipe is an easy weeknight meal that will steer you away from the boxed and frozen meals.  It has seafood, bread and hot, melty cheese… You can’t go wrong here!

First, preheat the oven to 350 degrees. Then, prepare your ingredients by chopping the red pepper and celery.

Drain the cans of crab.  In a bowl mix the crab, celery, peppers, mustard and sour cream.  We use canned crab near the tunafish cans at the grocery store because  it’s a cheaper option.  If you want the good crab and don’t mind spending the extra cash, then head over to the seafood section of your grocery store and grab the cans of crab meat there.  Make sure that you check the dry weight of crab on the side of the cans.  You want 8oz of dry weight all together.  Don’t forget to omit the juice before making the crab melts!  You don’t want soggy sandwiches.

Prepare your slices of bread.  We’ve discovered that our favorite bread to use is a loaf of rosemary, olive oil bread.

Place the sliced bread onto a baking sheet or baking stone.  Spread the crab mixture evenly onto the slices of bread.

Grate your cheese and layer it on!

Place the crab melts in the oven until the cheese has melted.  You can turn the broiler on once the cheese melts to get the golden crispy top, but watch the crab melts carefully!  They will toast really fast with the broiler on.

Yields four or five open-faced sandwiches

Ingredients:

  • 1 cup white crab meat
  • 2 tsp. Dijon mustard
  • 1/4 cup finely chopped red pepper
  • 1/4 cup finely chopped celery
  • 1/4 cup sour cream
  • 1 cup grated Monterey jack
  • 4-5 slices of your fresh bread of choice

Instructions:
